Apple Quinoa Cake

Prep Time: 10 minutes Cooking Time: 25 minutes Ready In: 35 minutes
  • 3/4 cup whole wheat flour
  • 1/2 t. baking powder
  • 1/4 t. baking soda
  • 1/4 cup olive oil
  • 1/2 t. ginger
  • 1/2 t. cinnamon
  • 1/4 t. salt
  • 2 apples, diced
  • 1/8 c. agave
  • 1 cup cooked quinoa
  • 1 t. vanilla
  • Topping: 1/4 cup oatmeal, 1 t. cinnamon, 1 T. brown sugar, 1 T. olive oil

Step 1: Mix together all ingredients.

Step 2: Pour into a square baking dish.

Step 3: Mix together topping and pour over fruit mixture.

Step 4: Bake at 350-degrees for 25 minutes, or until brown.
