Peach Chutney

  • 1 cup apple cider vinegar
  • 1 cup loosely packed brown sugar
  • 1 cup white sugar
  • 1 large red bell pepper, seeded & diced 1/4" (1 cup)
  • 1 medium red onion diced (1 cup)
  • 1/3 cup raisins
  • 2 large cloves garlic minced
  • 1 tsp salt
  • 3 lbs chopped peaches*
  • 1 tsp chili powder (optional)

Equipment: Saucepan, Spoon, Cutting board, Knife, Measuring cups & spoons, 12—4 oz canning jars

Combine vinegar and both sugars in a large saucepan and bring to a boil over medium heat. Stir in the bell pepper, onion, raisins, garlic, salt, chili powder (if using) and simmer 15 minutes. Add chopped peaches and accumulated juices and simmer an additional 10 minutes or until slightly thickened. If mixture seems a bit thin, continue to simmer until it thickens to desired consistency. *Slightly firm peaches are best for this recipe*  Once the mixture reaches your desired consistency, carefully pour into jars.
